The beauty of making jams in the winter time is that it inspires recipes that we never would have concocted when the weather was warm. For some people, the 'J' in a PB&J means strawberry Jam. But for others, that J will always mean grape Jelly. When you live in Massachusetts, you know that Jelly comes from Concord grapes. And when you live this close to Concord, you know - by smell, usually - that Concord grape vines are *everywhere* in our woods.
Grape harvesting is the only Stow Away activity that our kids truly enjoy (and will stick with for more than 10 minutes at a time). I mean, who wouldn't like climbing around in a nature-made fort of vines & leaves while your parents painstakingly work to forage un-fallen fruit in a race against the birds and the weather? Its fun, dirty, and comical theater all in one.
Our hard work is your opportunity. We hope you enjoy one of our favorite jellies to make - as well as to eat!
(Flavor update: At the beginning of the season, we offered 2 versions of Grape - a 'standard' and a 'Late Harvest' version. We had found that the juice harvested from the very last grapes of the season were even more intensely 'grape-y', and so had a specific jelly made purely from that latest fruit. (If you know anything about how ice wine is made in the Niagara region of Ontario, you'll appreciate the idea of the 'Late Grape', concept.) However, now we find that the absolute best balance of flavor comes from mixing juices from different harvests. When I was a kid, the 'comfort food' my mom would make me most often was cinnamon sugar toast. So I guess I shouldn't have been surprised that when Cord started making Cinnamon Crabapple Jelly, our 3 year old son decided it was *definitely* his favorite.
The crabapples come from our own orchard, and the cinnamon gives it that little extra 'kick' that tastes (to me) like a warm hug from my mom. Now that I'm a mom, I'm hoping that it gives you a hug, too. $7.007.00 USD Sold Out

Sourced from our own orchard, crabapple jelly was our 'gateway' product. We hated to see so much edible fruit fall to the ground, so we thought 'why not jelly?'
Turns out, crabapple juice makes an incredible base for all sorts of flavors.
We like to kick it up a notch and add heat from our home-grown peppers - jalapeno, cayenne, and serrano.

Rhubarb seems to be a polarizing flavor profile. But we at SAP have many fond memories of Strawberry Rhubarb Pie, and given the popularity of our flagship Apple Pie Jam, it just made sense to give Strawberry Rhubarb a whirl. After a pair of sample batches at our booth at Fifer's Day, the feedback told us that our customers a) prefer a 'rhubarb-forward' flavor profile, and b) prefer a strawberry-laden jam to a purely juice textured jelly. A few more experimental batches later, and our compromise is a rhubarb jelly base with a strawberry solids filling. In retrospect, it is a very similar process to the Apple Pie Jam - part way between a jelly and a jam. Add in a splash of lemon juice and zest to balance out the rhubarb tang, and 'brighten' the flavor combination just that tiny amount, and you're left with our new favorite seasonal flavor. A favorite vacation spot for the SAP team is Hilton Head, South Carolina. The local farmer's market introduced us to the best Peach Preserves we've ever had... after all, Hilton Head is just over the Georgia State line. Let's just say that Cord never backs down from a challenge...

The fruit is a mix from neighbors who bartered fruit for 'jam futures' and a set of relatives (with their own hobby orchard and beef cattle farm), and the recipe is all Cord's. If she had her way, the jam would be all Heather's - but we've convinced her to share it with you.

Peach Preserves is easily one of our most popular jams, so it was an easy decision to use it as a base for a new experimental batch - available now in *very* small quantities.
We often point back to our southern roots, as they have a distinct influence on our culinary point-of-view. This peach-based jam earns its name from the added 'hospitality' of a pinch of ginger, and some zing from our bumper crop of peppers. The heat is a bit back-handed, in that the tingle on your tongue comes at the end, and even lingers a bit. Somehow, the combination of jalapeno, cayenne, and serrano peppers give just the right amount of heat to make themselves known, but to avoid slapping you in the face. Rasperine combines nectarines and white peaches with our home-grown raspberries. The flavor is 'raspberry forward', yet less seedy than a straight raspberry jam. But that combination of berries and stone fruit is a real winner!

The Queen's Jam is the 2018 version of our 'mixed berry' flavor. Named for a traditional Swedish preserve that combines raspberries and wild bilberries, the Stow Away version incorporates our home-grown raspberries, blueberries from Derby Ridge Farm, and blackcurrants from a neighbor - in a carefully-tested, secret ratio. This 'berry trio' becomes the base of a balanced jam/jelly blend that is sweet, but not too sweet, with seeds, but not too many seeds. Originally born as a 'waste-not, want-not' experiment with only enough fruit for a partial batch of each, we mixed them and found the blend even better than the single-fruit jars. A few ratio-testing batches later, and we arrived at the perfect balance, mostly blueberry with a healthy dose of blackberry.

Once a one-off jam flavor that we made as an experiment, this versatile jelly has become a favorite - both in our home, and of our customers. We love it on pancakes and toast, or as part of a cheese & wine board, and it is also a typical jam cocktail ingredient. I think one of my favorite aspects of this flavor is that its base is the juice we make from the peach skins that would otherwise be wasted after we peel peaches for Peach Preserves. A big part of jam and jelly making is the 'preserving philosophy'. In other words - don't waste *anything*.
The vanilla peach jelly came from a desire to not waste all the peelings we were left with after prepping the fruit for our peach preserves. Cord added the vanilla for a little extra twist, and it was an immediate hit with tasters who happened to be 'at the right place at the right time'.
At the risk of detracting from the 'upbeat' tone of our descriptions, the vanilla peach was also the very favorite of a dear family friend who passed away unexpectedly on the same weekend we launched our online store. So, I think I'll always think of this flavor as 'Alida's jam'. <3
